Ingredients
  

The Notebook movie night drinks:

  • 250 ml [1 cup] coconut water
  • 150 ml [½ cup] peach, blueberry & apple smoothie i.e. Innocent
  • 3 tbsp raspberry coulis for coating
  • 2 pale biscuits crushed into a fine crumb
  • 3 tbsp aquafaba
  • 3 tbsp caster [superfine] sugar

Instructions
 

The Notebook movie night drinks:

  • Prepare the aquafaba meringue first. In a clean mixing bowl or jug, pour in the aquafaba and whisk to soft peaks using an electric whisk on medium - high speed.
  • When the aquafaba resembles milk foam on a coffee and holds soft peaks, add the sugar one tbsp at a time whilst whisking on a medium - high speed, leaving a few seconds between each tbsp to allow the sugar to fully incorporate. Your meringue should be glossy, white, and hold stiff peaks when ready.
  • Once at stiff peaks, set the meringue aside.
  • Coat the rim of each glass in raspberry coulis, then dip in the fine biscuit crumb and coat well.
  • Pour half the coconut water into one glass and the rest into the other. Do the same with the smoothie, then gently mix with a stirrer, straw, or small spoon.
  • Carefully spoon a couple of tbsp worth of meringue onto the top of each drink, allowing it to float on the liquid.
  • Sprinkle extra biscuit “sand” onto a part of the meringue float if desired.
  • Serve immediately and enjoy!

Notes

These The Notebook themed movie night drinks are so easy to whip up and make a delicious beverage for a summer movie night watching this classic romantic movie. These drinks are best served immediately, but can be kept in the fridge for an hour or so before the meringue starts to dissolve. Enjoy!
